Ital Rasta: Jamaican Seasoned Cauliflower Recipe (#1/7)

Jamaican Rasta Ital Cauliflower Recipe

  1. 4 tbsp Tropical Sun Pure Coconut Oil
  2. 1 spring onion, chopped
  3. 1 onion, chopped
  4. 1 tsp Dried Thyme
  5. 1 tsp Garlic Granules
  6. 2 tsp Mild Caribbean Curry Powder
  7. 3 tsp  Ground Pimento
  8. 250ml Natural Coconut Milk
  9. 150ml water
  10. 300g potatoes, diced
  11. 450g sweet potatoes, diced
  12. 350g pumpkin, seeded and diced
  13. ½ cauliflower, chopped
  14. 1 red pepper, chopped
  15. 200g green beans
  16. Handful of coriander, finely chopped


How to cook:

Heat the oil in a large frying pan on a medium heat, then add in the spring thyme, onion, garlic granules, curry powder and pimento, stirring continuously, cooking until the onions are lightly brownedItal food: How to cook Spicy Eggplant
Stir in the coconut milk and water and mix well

Add in the potatoes and sweet potatoes and simmer for 10 minutes, or until the potatoes start to soften
Lower the heat and add in the pumpkin, cauliflower, red pepper and green beans
Cover and simmer for another 10 minutes, or until all of the vegetables are cooked
Garnish with coriander
Serve and enjoy!
